Have you tried keto “air-fried” chicken, made easy with pork rinds and spices? If there’s a handful of dinner options that take about 30-40 minutes or less to put on the table, this is certainly one of them. While it may take up to 24 minutes in the fryer to cook these yummy chicken bites, you can easily sauté fresh veggies and/or prepare side salads while you wait to make this a complete family meal.

Keto Air-Fried Chicken

Try my simple, grain-free pork rind or almond flour breading for your air-fryer chicken nights!

Macros for a 4 oz. serving: 238 to 250 calories | 28.8g to 35g protein | 1.1g to 2g net carbs | 10g to 11.8g fat

Ingredients

  • Pork Rind or Almond Flour Breading Options
  • 2.5 ounces pork rinds–I prefer 405 Meats brand, which is antibiotic-free and humanely raised, but the Epic brand line would be my next go to.

  • 1/2 cup almond flour is an option if you don’t have pork rinds; however, I would add about 1/2 teaspoon of Himalayan pink salt if you use it, as pork rinds are already salted

  • Chicken + Other Breading Ingredients
  • 1 pound free-range organic chicken thighs, or other cuts of meat, with or without skins

  • 1 large pasture-raised organic egg

  • 1 teaspoon garlic powder

  • 1/2 to 1 teaspoon almond flour, if using pork rinds

  • 1/2 teaspoon paprika

  • 1/2 teaspoon ground black pepper, optional, if it’s already in your pork rinds

  • 1/2 teaspoon cayenne pepper

  • 1/2 teaspoon onion powder

Directions

  • Add all the dry ingredients onto a large plate or small casserole dish, and mix together with a fork.
  • Whisk the egg into a 4-cup Pyrex or similar-sized bowl. I don’t find that the egg makes the pork rind breading stick to the chicken any better, but it helps to provide a slightly thicker crusting to the chicken when fried.
  • Coat the chicken in egg.
  • Then evenly coat all sides of the chicken in the mix of dry ingredients.
  • Place dry-coated chicken onto another plate or keep them on the dry mix plate, if there’s room. Be careful that each piece of chicken remains more or less dry with the spice mixture, as the pork rinds tend to clump together when wet.
  • Spray your air fryer with oil to prevent as much sticking as possible.
  • Air fry your chicken (thighs) at 350-375 degrees, depending on your fryer, for about 7-12 minutes on each side, or until they look golden brown. If you’re using bone-in chicken, especially breasts, you’ll need to keep your chicken in closer to the 12-15 minute mark on each side.
  • Remove from air fryer, let cool for 5 minutes before serving, and enjoy!

Notes

  • Whenever possible, I recommend using clean, organic ingredients.
