And, most of our cupcakes come topped with a sprinkling of either keto chocolate shavings, espresso powder* with a coffee bean* on top, or Lily’s dark chocolate chips, depending on what particular flavor is ordered. How to Store Your Ketolicious Eats Cupcakes
Ketolicious Eats cupcakes have been made with dairy-free batter and organic pasture-raised butter-based frosting. As such, the frosting can become very soft, even losing its initial shape, in higher temps over 72 degrees. On the other hand, the butter in the frosting will become hard and the cake part, including the coconut oil/milk, will become firm after refrigeration. They are best eaten very slightly chilled or at room temperature when the frosting has softened. For simplicity, use the recommendations below for cupcake storage during various seasons.
Fall/Winter: In cooler temps, it is not necessary to refrigerate your cupcakes if your home remains at 68 degrees or cooler throughout the day. They can be stored at room temperature for up to one week and will retain more of their moisture when stored in an air-tight container.
Spring/Summer: In warmer temps, it is recommended to refrigerate your cupcakes. Prior to enjoying your cupcakes for a small party, set the cupcake box out at room temperature for at least one hour, dependent on the temperature indoors/outdoors. This will allow the fats in the cake and the frosting to soften. If you are eating the cupcakes individually, leave the cupcake out for 20 to 30 minutes for the frosting to soften. If you plan on refrigerating these for an extended period of time, having them in and out of the fridge a lot, or would like to freeze them (good for up to a month), they are best to kept in an air-tight container. Cupcakes will lose some their moisture when refrigerated, forming condensation that often escapes to the inside of the bakery box and causing the box to warp.
